Tortellini Soup - The Recipe

Pin It Many a day it's been when the frivolous snow tumbles down from the darkened sky as the aromatic smells of fresh Tortellini Soup drifts about the house mixed with the smell of freshly-baked rolls. Couple this with the melodious strains of Alison Krauss drifting lazily about the house and you have nothing short than a potpourri of deliciousness.


This is a really great recipe that I received from a friend several years ago and have made numerous times...I've never had anyone walk away disappointed, either. So to you today I present you with the highly-delicious recipe which is sure to become a favorite for years to come and a family meal traditional.

Tortellini Soup

Ingredients:

1 package of fresh spinach (prepare by taking off stems while soup is cooking; chop it up so that the leaves aren’t too large).
1 - 49 oz. can chicken broth
2 packages of 8 oz. cheese tortellini
1 lb. of Italian sausage
½ lb. of mushrooms - sliced
1 onion - diced
1-2 carrots - diced
1 can Italian tomatoes - chopped up
2 t dry basil
Parmesan cheese and salt and pepper to taste (I add some salt and pepper while cooking and then later add cheese to each individual serving as desired).

Cook and set sausage aside. in 8-19 qt. pan sauté onion, mushrooms, carrots in 2-3 T of butter.  Add broth, meat, tomatoes, & basil to vegetables and cook 20-30 min.   You'll want to salt and pepper to taste, or let people do it themselves. Add tortellini and cook 6-8 min more or until done.  Add spinach and cook an additional 2-3 min.  Serve with Parmesan cheese.

I will definitely have to try this! I'll have to tweak it a bit to make a veggie version for my husband but it sounds divine!

I must admit my mouth started watering when I read this recipe. Might just have to go out and buy the ingredients and make it sometime...

(I bet mine won't look nearly as delicious as yours though... lol)
